Blood Orange & Shallot Vinaigrette

It's so easy to eat healthy with a really great vinaigrette. I particularly love this dressing because of the seasonality of the blood oranges. The subtle flavors of shallots and blood oranges marry perfectly for a sensational seasonal dressing!

- 3/4 cup blood orange juice
- 3/4 tsp blood orange zest
- 1 tsp Dijon mustard
- 2 tsp honey
- 1 1/2 tbsp rice vinegar
- 2 each garlic cloves finely minced
- 1/2 cup olive oil
- 2 tbsp shallots finely minced
- 2 tsp Italian flat leaf parsley finely minced
- 2 tsp fresh chives finely minced
- TT Kosher salt and freshly ground white pepper
Combine the first six ingredients together in large mixing bowl. Whisk together to combine.
Using an emulsion stick blender or whisk, gradually pour olive oil into blood orange mixture. Completely emulsify oil and juice mixture together.
Stir in remaining ingredients. Adjust seasoning. Store in fun jars to use as needed.
