Citrus Mascarpone Cream

Think of this citrus mascarpone cheese as a "blingy" accessory to readily dress many of your favorite foods. Sweet, creamy goodness blanketed in citrus packed flavor with a touch of velvety vanilla....are you kidding? Not to mention the unrivaled smoothness of mascarpone cheese...delicious!

Ingredients Equipment Method Notes

Ingredients
  

  • 1 tub mascarpone cheese 17.6 ounces
  • 2 cups powdered sugar
  • 1 each lemon cleaned and zested
  • 1 each lime cleaned and zested
  • 1 each orange cleaned and zested
  • 2 each vanilla beans halved and scraped

Equipment

  • Standing Mixer or hand mixer
  • Storage container
  • Spatula
  • Zester
  • Measuring cups and spoons

Method
 

  1. In the bowl of a standing mixer or large bowl, add 1 tub of mascarpone cheese and powdered sugar and mix well.
  2. Clean fruit and zest using a Micro-plane. Add scraped vanilla bean pods into mixture and mix well. Store in an air-tight container until ready to use.

Notes

This versatile spread is well worth it's weight in gold!  Once you have mixed all the deliciousness together, consider using it in the following applications:
Filling for a crepe- Filling for a layered cake- As a dip with fruit
Spooned into shapes and chilled for a dessert display or tray
As a layer in a trifle- Combined with plain yogurt- Frozen as a popsicle
