I love my children so very much! My son is an energetic and lively soul that constantly wants to be at my side helping me with my blog. My daughter, being a bit older, just wants to know when food ready to taste. Just like me, she is a super taster so, I rely on her to tell me if I hit the mark with recipes.

Both of my kids add so much value to my life! I cannot imagine a day without their especially delightful panache injected into my routine! So, being that Judah has such an amazing whimsical spirit about him, he decided to make a recipe for me to put on this blog. Without hesitation, I agreed! I received one recipe at Christmas which prompted me to cry like a child because it was literally the most thoughtful gift I have EVER received. Because of my Christmas reaction, I received another recipe for my birthday. We both decided that the birthday recipe would be “blogged” first. I cannot take life so seriously that I would ever stifle his creativity nor his desire to help bring his positivity to this blog! So, here we are!

Think of this like the show Chopped. I was given a list of specific “brecfest” 🙂 ingredients. It was very clear that this recipe was intended for his enjoyment and of course, I would oblige. Together we created strawberry, nutella and banana crepes with whipped cream. Rather lengthy so, Judah’s Pancakes it is! Plus, he loves seeing his name on the blog. This kid friendly recipe should cover all the kiddy cravings. The crepe batter is not sweet so, these little pancakes can be stuffed with savory items as well. This kid friendly recipe should cover all the kiddy cravings. The crepe batter is not sweet so, these little pancakes can be stuffed with savory items as well. Cheers to my little man Judah for his thoughtful present! And, a tasty, fun afternoon being together in the kitchen!

Equipment

  • Whisk
  • Large Mixing Bowl
  • Chef knife
  • Cutting Board
  • Small saute pan
  • Immersion blender

Ingredients
  

  • 1 cup all-purpose flour
  • 2 each large eggs
  • 1/2 cup whole milk
  • 1/2 cup water
  • 1/4 cup powdered sugar optional
  • 1/4 tsp Kosher salt
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract optional
  • 1 quart strawberries cleaned and quartered
  • 3 each ripe bananas cut on the bias
  • 1 jar Nutella as desired
  • 1 can whipped cream
  • powdered sugar for dusting

Instructions
 

  • In a large mixing bowl, combine flour and eggs. Gradually add in milk and water to combine.

  • If using sugar, add to mixture and mix well.
  • Add the salt and butter and beat until smooth. Add the vanilla extract now, if using.
  • Using immersion blender, blend all ingredients together to ensure a smooth and shiney mixture without lumps.

  • Heat a lightly buttered or sprayed saute pan over medium high heat. Use approximately 1/4 cup of mixture in the bottom of pan, coating evenly over the bottom. Tilt the pan in a circular motion to ensure the batter coats the surface evenly.

  • Cook the crepe for about 2 minutes or just until it begins to brown lightly. Loosen with a spatula or fork, turn and cook the other side. Lay crepes on parchment paper to ensure crepes do not break when assembling.

  • While crepes are cooling, cut strawberries and bananas.

  • When constructing, spread a thin layer of Nutella on bottom of pancake. Layer with bananas and then strawberries and squirt a little whipped cream inside.

  • Fold one side of the crepe to the middle and then the other side to the middle. Invert, seam side down on a serving plate.

  • Top with more bananas, strawberries and a final squirt of whipped cream. Top with powdered sugar if desired and serve.

Notes

Since the crepe batter is not sweet, you can do the following with these crepes:
ham & cheese, mushrooms with herbs and goat cheese, pulled pork, grilled chicken with pesto aioli and greens….and many more options!  Be creative!  These are a blank canvas for you to create!
