Autumn Turkey Club Wrap
Autumn is my favorite time of year as you may well know. I’m always looking for ways to celebrate this bountiful season. Hearty greens, flavorful root vegetables, zingy cranberries and a myriad of harvest favorites pour out at Farmer’s Markets. Local growers and specialty grocers are also a great resource for your meal planning.
This little wrap is a great introductory to the Fall harvest. Hearty kale, spinach and sweet carrots compliment the smoky bacon and creamy goat cheese. Adding turkey breast just sends it over the edge! These are perfect platter-ed up for a party or as a salad by itself. The ingredients are simple. The flavors are simple. The results are satisfying. This recipe can easily transform into a vegan option. Try smoked tofu, vegan cheese, vegan baconbits, and vegan wraps and you have a wonderful substitute for animal protein.
The real treat to this salad or wrap is the dressing. I have linked my Blood Orange & Shallot Vinaigrette which is what makes this ditty “pop”. I’m in love with this vinaigrette! Being dairy free with no processed sugar makes this another win. As a drizzle, as an accompaniment or marinade, it works. Autumn Turkey Club Wrap
Equipment
- Cutting Board
- Chef knife
- Large Mixing Bowl
- Bamboo toothpicks (optional)
Ingredients
- 2 cups kale, raw cleaned and chopped
- 2 cups spinach, raw cleaned
- 1 cup turkey breast cooked diced or shredded
- 6 strips Applewood bacon cooked and crumbled
- 1/2 cup goat cheese crumbled
- 1/2 cup shredded carrots
- 1/3 cup dried cranberries
- 1/3 cup Blood Orange & Shallot Vinaigrette use more or less based on your preference
Instructions
- Cook bacon. Crumble and set aside. Shred or dice leftover turkey breast and set aside.
- Combine the greens and carrots together in a large bowl and gently toss to combine.
- Add goat cheese, bacon crumbles, dried cranberries and cooked turkey. Add vinaigrette and gently toss to coat.
- Lay out wrap of choice. Use about 1 cup of mixture and place on bottom third of wrap. Begin by bringing sides together; bring wrap closest to your stomach, over the top and continue to roll until it resembles a burrito. Cut on a bias and enjoy!
- You can also eat this as a salad without the wrap. In either application it is equally delicious!
