Citrus Mascarpone Cheese

Think of this citrus mascarpone cheese as a “blingy” accessory to readily dress many of your favorite foods.
Using the zest of three different citrus fruits adds beautiful aromas, encompassing the smooth mascarpone. One essential key to your recipes success is the use of a Microplane. This versatile tool really should be a staple in your kitchen if you don’t already have one. Microplanes are pivotal to keeping the white “pith” (the bitter part of the fruit zest), out of your recipes and out of the bitter zone. They really do make a difference! There are many different types, but I have linked the one I use because it can be used for grating cheese as well.
Once you have mixed everything together, your cheese spreading possibilities are endless! Consider removing the sugar and vanilla beans, adding roasted garlic and use it as a stuffing for pork loin. Citrus Mascarpone Cream
Equipment
- Standing Mixer or hand mixer
- Storage container
- Spatula
- Zester
- Measuring cups and spoons
Ingredients
- 1 tub mascarpone cheese 17.6 ounces
- 2 cups powdered sugar
- 1 each lemon cleaned and zested
- 1 each lime cleaned and zested
- 1 each orange cleaned and zested
- 2 each vanilla beans halved and scraped
Instructions
- In the bowl of a standing mixer or large bowl, add 1 tub of mascarpone cheese and powdered sugar and mix well.
- Clean fruit and zest using a Micro-plane. Add scraped vanilla bean pods into mixture and mix well. Store in an air-tight container until ready to use.
